1. Pat the red snapper fillet dry with a paper towel, sprinkle with salt and pepper. Melt half of the butter in a skillet over medium-high heat. Place the fish skin-side down, and sear for 3-4 minutes until the skin is crispy. 2. Flip the fish and add the remaining butter. Once melted, add minced garlic and baste the fish with the garlic butter. Cook for another 3-4 minutes until fully cooked and serve immediately, drizzling the garlic butter over the fish.
